In a skillet, heat the oil. Add the garlic and cook, stirring, about 30 s.
Add the peppers, pour 1/4 c of water. Reduce the heat to medium and cook a few minutes. Add the zucchini.
Cook for 4-5 min., stirring occasionally, or until the veggies are fork tender. Add the spices, ketchup, parsley.
Transfer the veggies to the bowl and cover.
In a big bowl, lightly whisk all crepes ingredients.
In a skillet, heat the oil. Pour 1/3 c of batter. Cook for 2-3 min., then flip and cook shortly on the other side.
In a food processor, add all sauce ingredients. Pulse until puree.
Serve the crepes with veggies and sauce.
