  • 200 g baby carrots, cutted in half
  • 1 big parsnip, cutted
  • 1 c frozen green beans, washed and rinsed
  • 1 tbsp oil
  • pinch of sea salt
  • pinch of black pepper
Other ingredients
  • 2/3 c bulgur
  • 2-3 tbsp olive oil
  • 1 tbsp fresh lemon juice
  • 3 tbsp sunflower seeds
  • 1 avocado
Gaminimas
  1. Preheat the oven to 190 C temp.

  2. Line a baking pan with parchment paper. Transfer the carrots and parsnip on the pan. Sprinkle with salt and pepper. Add the oil. Mix until coated.

  3. After 20 min of roasting, add the beans. Mix with other veggies. Roast about 20-25 min. or until the veggies are fork-tender.

  4. At this time, cook the bulgur.

  5. Serve with bulgur, rucola, veggies. Drizzle with olive oil, lemon juice. Sprinkle with sunflower seeds.
