Ingredientai
Pumpkin
  • 2 1/2-3 c pumpkin, cut into cubes
  • 1 tbsp oil
  • pinch of salt
  • pinch of pepper
Chickpea
  • 1 can (400 g) chickpeas, washed and drained
  • 1/2 tsp garlic powder
  • 1 tsp red paprika
  • 1/3 tsp cayenne pepper
Other ingredients
  • 100 g mixed lettuce
  • 1 1/2 cup cherry tomatoes, halved
  • 1/3 cup fresh pomegranate seeds
  • 50 g feta
  • 3 tbsp pumpkin seeds
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • pinch of salt
  • pinch of pepper
Gaminimas
  1. Preheat oven to 180C.

  2. Add pumpkin cubes on a baking sheet, lined with parchment paper. Drizzle with oil, salt, pepper. Mix with hands. 

  3. In a big bowl, mix chickpeas and spices. Add them on another baking sheet, lined with parchment paper. 

  4. Roast both about 20-25 min. After 10-12 min.  mix with a spatula.

  5. In a big bowl, mix all ingredients. Serve warm or cold.
