Ingredientai
  • 3 1/2 c (1 big) sweet potato, peeled and cubed
  • 2 1/2 c broccoli, separated into florets
  • 1 (200 g) firm block tofu
  • 1 can light coconut milk
  • 3 tbsp green curry paste "Santa Maria"
  • 2 tbsp coconut oil
  • Himalayan salt
  • 2 tbsp fresh parsley, finely chopped
Gaminimas
  1. Drain the tofu. Wrap the tofu in a paper towel. Place a cutting board or heavy thing on it. Keep for about 15-20 minutes, until the water is removed. Cut into cubes.
  2. In a skillet, heat the coconut oil. Add the tofu. Fry for 8 min, until golden brown. Remove and set aside.

  3. Heat the coconut oil again. Add the sweet potato. Fry for a few minutes. Pour the coconut milk, green curry paste. Reduce the heat. Simmer for 5 min. Add tofu, broccoli. Sprinkle with salt. Simmer for 3 min.

  4. Add the parsley over the top.
