In a skillet, heat the coconut oil. Add the tofu. Fry for 8 min, until golden brown. Remove and set aside.
Heat the coconut oil again. Add the sweet potato. Fry for a few minutes. Pour the coconut milk, green curry paste. Reduce the heat. Simmer for 5 min. Add tofu, broccoli. Sprinkle with salt. Simmer for 3 min.
Add the parsley over the top.
Serve with quinoa or rice.
