Cut potatoes into wedges. Heat the oil in a pan and add the potatoes. Cook about 4 min., allowing them to become lightly golden. Place potatoes on the paper towel and allowing oil to drain off.
In a pan, add garlic, chilli flakes. Cook about 30 s. Add chopped zucchini, tomatoes and potatoes. Pour 2 tbsp. water. Cook on a low heat about 15 min.
Serve with rice.
